End of Summer...MO State Fair Recap!

So for a most people they consider the end of summer to be this coming weekend, and believe me I enjoy Labor Day weekend just as much as everyone else. But to me the unofficial end of summer comes with the Missouri State Fair. Ten days of fun to celebrate all the summers’ hard work. And this year was no exception! We had an absolute blast and if you are one of my friends on Facebook you have seen some of the fun we had! Not only was it a fun fair but we had quite a successful fair with the pigs as well. Here are some of my favorite pics from the fair! I am already excited to see my little showgirl in the ring next summer!

We have had a great and busy summer and are ready to see what the fall brings! Hope you guys got a chance to attend the MO State Fair and if you aren't from MO I hope you got the chance to attend your own state fair. Lasting memories are made there!

Throwback Thursday full of randoms!!!



I am so excited for the Missouri State Fair!!! But the above picture makes me CRY, that was only one year ago! Oh my she has grown.


Anyway back to my excitement we are ready for the fair fun- friends, corn dogs, pig shows, plenty of family time, funnel cakes, seeing all the sights (if you have ever been to a state fair you totally know what I mean!)

Charlot will be making her show pig debut it should be exciting, no I am not turning her loose with a pig and a ring full of other pigs she will be assisting momma on show day.

I am just ready for it we take our first set of hog down on Sunday and will be there each day until the following Sunday. By then I am certain I will have my fill of the fair but for now I am just ready to get going!

And just for good measure here is a picture of her when we were buying her new boots on Saturday!

He asked for a salad!!!

Last night the hubs called me on his way home to see what I was up to and the normal conservation proceeded.

Me- “Just getting home with Charlot trying to figure out what to fix for supper.”

Hubs- “Oh how is the toots (that is his oh so affectionate name for her)”

Me-“She’s good, what do you want for supper”

Hubs-“Is there such a thing as a BLT Salad?”

Me-“Hum…sure I’ll make one”

Thus ensued me scrambling through Pintrest racking my brain to think how I can make a BLT into a salad. Now you may be thinking hum T why in the heck are you concerned take lettuce tomato and bacon throw in a bowl and hooray there is your BLT salad for supper. Let’s just say I have never been one for taking the easy route I wanted it to be festive, filling and fabulous if I was going to eat it for supper.

The following recipe was the result and man it was good!

The hubs reaction was classic, “wow this is pretty fancy (ha), if I were making it I would have thrown lettuce tomato and bacon in a bowl and probably topped it with Miracle Whip.” “But this… this is seriously good”

If I didn’t love him so much some days I might kill him! Anyway enjoy the salad it truly is a great summer supper!

Grilled Chicken and BLT Salad (serves 2)

1 Chicken Breast (season with salt pepper or whatever suits your fancy)

6 Slices of Thick Cut Peppered Bacon (Cut into thick pieces)

1 Boiled Egg (I am not a boiled egg eater so if both parties want one then you would need more)

1 Head of Romaine Lettuce (chopped)

1 Cup Cherry Tomatoes

1 Small Head of Broccoli (cut into small pieces)

½ Yellow Bell Pepper (sliced in thin strips)

½ cup Cheddar Cheese (Shredded)

Croutons (I made my own but you can use the delicious store bought kind I just didn’t have any)

We topped our salads with Brianna’s Creamy Poppy Seed Dressing. But this would be delicious with ranch as well!

In a skillet cook bacon until crispy. When it is finished drain some of the grease away and cook your seasoned Chicken Breast in the same skillet. Leave some of the bacon drippings these will flavor the chicken nicely. Allow chicken to cook all the way through and remove from pan and let it rest prior to slicing.

Now assemble! Nice layer of romaine as a base then I added the tomatoes, broccoli, egg and pepper. Next I thinly sliced the chicken breast on the bias and topped each salad with an equal portion of it. Then the cheese came next I kind of like my cheese to get a bit melty so that is why I put it on after the chicken but if you can do it however you like! Finally top with the GLORIOUS bacon and croutons. And finish with your dressing of choice. YUMMY!
