Broccoli Chicken Lo Mein



I posted a photo of my supper Saturday night and several of my Facebook friends asked for the recipe so hence the blog post...because let's get honest I am a terrible blogger. I wanted to say that this recipe is super freezer friendly as a meal kit something I do regularly. I have included the instructions for the freezer method in the recipe as well. The recipe is also great to switch up vegetables and even meats with, plus in my home anything with noodles is consumed very well. I hope you all enjoy! 

I wanted to take a second and say that I really want to get back to blogging on the regular, I really do just with two little ones and two busy jobs my poor blog keeps finding it's way to the back burner. So if you are reading this thanks for sticking with me. I hope all of you are having a blessed Monday. 
Broccoli Chicken Lo Mein 
Makes 6-8 servings
Ingredients
1.5 lbs. Chicken Breast Diced
4 Broccoli Crowns
¼  cup Soy Sauce
¼ cup Teriyaki Sauce
¼ cup Hoisin Sauce
1 TSP Minced Garlic
1 TSP Rice Vinegar
1 TSP Sesame Oil
1 Can Bamboo Shoots drained
1 Can Water Chestnuts drained
1-2 tsp Cornstarch mixed with water (if needed to thicken) 
½ lb Linguini Pasta Cooked until just al dente  

In a medium size bowl mix Soy Sauce, Teriyaki Sauce, Hoisin Sauce, Vinegar and Oil pour over chicken and marinate for at least 30 minutes. Steam broccoli for 5-6 minutes to soften. Heat EVOO in a large nonstick skillet add in the chicken and sauce cook through. Add in broccoli and cook until desired tenderness stir in bamboo shoots and water chestnuts. If the sauce is too thin you may need to thicken with cornstarch. Just before serving stir in noodles to coat with sauce and mix in the vegetable through.


Freezer Ready Directions-In a medium size bowl mix Soy Sauce, Teriyaki Sauce, Hoisin Sauce, Vinegar and Oil Place Chicken in a quart Ziploc bag pour sauce mixture over it and seal. Place broccoli in a quart Ziploc bag. Take a gallon Ziploc bag and add each quart bag to it.
Cooking day! Thaw bag in the refrigerator all day. When you get home pour chicken into a nonstick skillet and cook through add broccoli and cook until desired tenderness. Serve over rice, or ramen.

15 Go to Ground Beef Meals for the Slow Cooker




Hey friends and I do say friends because you are and because friends give one another some grace especially when it comes to the frequency or infrequency (cough, cough) of their blogs. That's ok I know you all will forgive me especially after you read this post. It could possibly change your life, well probably not but hey you can't say I didn't try. 

What in the world prompted me to finally post a blog again, ha! Well dears it was you guys! I saw several people over the past few weeks asking on their Facebook what some favorite crock pot meals were, especially those with ground beef. I kept commenting and then others would ask for recipes and finally light bulb!!! I needed to do a blog post, hahaha! 

So I will admit I wasn't all that in love with slow cooker cooking for very many dishes outside of roast and soup because so many things ended up mushy, is that a word??? Then I discovered programmable slow cookers, HOLY MOLY!!! If you don't have one and you are serious about adding more crock pot meals to your life add one to your life, Christmas is coming. Yes I ask for kitchen appliances for holiday presents, don't judge me. Here is a link to one I love. The thing about these is that you can select the cooking time then the machine goes to keep warm once that cooking time is over. Say what!!! I know! 

Another problem I had is even with the programmable pot I still felt like many recipes were mushy, still is this a word? Most people who know me know I am a HUGE texture person (hence my aversion to coconut), this didn't bode well for most slow cooking. Then I read a recipe that suggested throwing raw pasta into the cooker...I was nervous but man alive did it help! Most of the recipes I have included have instructions on what to do with the rice or pasta. 

Lastly it drove me crazy to read this delicious recipe that then required me to break out a skillet to cook the meat up ahead of time. Listen lady I really want to make this but for real I am putting this together before 6 am, remembering that I need to brown the meat then drain it is wayyy too much for that time of the morning. This all changed one day when I bought twenty plus pounds of ground beef in the store because it was a good deal, I roll like that. The thing was even though it was a good deal it still was a chunk of change, I was determined to not let this precious meat go to waste in my freezer. I went home and chopped up like 10 onions and began browning hamburger with some onions and salt and pepper. I drained it and cooled it then placed it in quart freezer bags. At this point was thought it would be ready for me to use for tacos, spaghetti sauce, soups whatever I was making for supper that night...then one fateful morning before 6 am I was mad because I forgot to get burger browned for a crock pot recipe I wanted to make. The heavens seemed to open and my deep freezer called my name reminding me of all that glorious burger meat that was pre-browned and waiting for me. 
Obviously a life changing day. HA! But seriously it does make life easier and I save a ton of money when I buy ground beef and can buy it on sale. 
Yes you read that, I am married to a man who raises not only hogs but cattle too and I buy meat but that is another story for another day!

Using Pre-Cooked Burger 

Asian Lettuce Wraps- Below! (I just mix all ingredient in the crock pot and cook all day)

Using Raw Burger
Mozzarella Stuffed Meatball Subs- Recipe Link (I just place a little cheese in the center of each Meatball as I am rolling them up and also add about 1 cup of water to the sauce)
Barbecue Meatballs- Recipe Link (I take these to the just past the browning step and use the crock pot to cook them in the sauce. 6 hours on low)
Stuffed Cabbage Rolls- Recipe Link (I omit the Rosemary because well I'm not a fan)


Copy Cat PF Chang Lettuce Wraps
Makes 6-8 servings
Ingredients
1 TBSP Olive Oil
1 lb Ground Beef
1 Onion diced
2 Cloves Garlic minced
¼ cup Hoisin Sauce
2 TBSP Soy Sauce
1 TBSP Rice Wine Vinegar
1 TSP Ginger
1 TBSP Asian Chili Paste (or Sriracha) 
1 TSP Teriyaki Sauce
1 TSP Sesame Oil
1 (8 oz) Can Water Chestnuts drained and diced
2 Green Onion Thinly Sliced
Salt and Pepper to taste

1 Head Lettuce (Butter, Ice Berg, Romaine)

Heat olive oil in a skillet. Add in beef, onion, and garlic cook until meat is browned. Make sure to break up the meat as you cook it. Drain off any excess fat.

In a small bowl mix Hoisin, Soy, Rice Wine Vinegar, Ginger, Chili Pasta, Teriyaki, and Sesame Oil. Return meat mixture to the skillet and add in the water chestnuts heat on medium. Pour sauce over the mixture and stir to combine, cook until heated through and sauce has reduced a bit. Add in green onion.

This mixture can now be served in lettuce cups or froze. To freeze allow mixture to cool slightly. Place in a gallon freezer bag.

Serving Day-
Thaw bag in fridge or a warm water bath (if your forgetful like me). Pour mixture into a skillet to warm through. Serve with lettuce.

Zucchini Ravioli



First I want to say thank you so much for all your kind words last week in the passing of our dear friend and babysitter. They truly meant the world to me. Her life and love were so honored in her services this past weekend.

Today I bring you one of my newest obsessions!!! Zucchini used as noodles! I am not on the Keto diet and I am not eating low carb, I truly struggle trying to cut carbs from my life, it's a love I don't want to see leave my life.But I love zucchini and I love my thighs to jiggle less so I have been switching out my normal pasta for zucchini. I don't see this ending anytime soon. These ravioli did not disappoint at all actually this morning the hubs said those cheesy green things were awesome when I got home last night. Score one for the home team!

If you want to give this whole switch a try I have a few tips.
-Salt your zucchini before cooking and allow it to drain I do this over paper towels and blot it dry. The more moisture you can draw out of there the better allow them to set for 15-20 minutes.
-Invest in a sprializer (I don't know if that is a word) it cuts veggies into spirals. My kids find the noodles fun to eat this way.
-When using a vegetable peeler peel from the bottom it just works better.
Give these green noodles a try I think you'll be amazed how truly good they are!

ZUCCHINI RAVIOLI

2 cups whole milk ricotta
4 medium zucchini
1/2 cup Parmesan cheese (divided)
1 cup Mozzarella cheese (divided)
1 egg
1 tsp Garlic Powder
2 tsp dried basil
2 tsp dried parsley
1/2 tsp Red pepper flake
1 jar of your favorite tomato sauce (I am a big fan of the Aldi's marinara)
Kosher salt and freshly ground pepper (to taste)

Preheat the oven to 375ºF. Lightly grease a 9x13-inch baking dish..
Line a medium bowl with paper towel and add ricotta. Set aside and allow to sit for 30 minutes.
Using a vegetable peeler, slice the zucchini lengthwise into thin strips, stopping when you reach the center. Discard the center or reserve for another use. Place strips on a paper towel, sprinkle lightly with salt and set aside.
Gently gather the papertowel around the ricotta and squeeze out any excess liquid.
In a medium bowl, add ricotta, 1/4 cup Parmesan, 1/4 cup mozzarella, egg, garlic powder, basil, parsley, red pepper. Season with salt and pepper and stir until fully combined. Set aside for 8-10 minutes.
Blot any excess moisture off of zucchini strips. On a work space, overlap 2 strips of zucchini and then overlap 2 additional strips on top of and across the first 2 strips, forming a cross shape.
Using a spoon or a cookie scoop, place a tablespoon of ricotta mixture into the center of the zucchini formation.
Fold the bottom layer of the zucchini strips over the filling and into the center so that they are overlapping. Fold in the other 2 strips to center so that filling is completely enclosed. Repeat process with remaining filling and zucchini.
In prepared baking dish, add a 1/2 cup of sauce, spread evenly. Place formed zucchini pockets seam-side down. Pour remaining tomato sauce over zucchini. Top with remaining Parmesan and Mozzarella. Transfer to oven and bake for 20-25 minutes or until zucchini is cooked through.

Be like me!!! Double the recipe! Prep one batch for the freezer and prep the other  the zucchini ravioli the day before cooking and store in an airtight container and thrown in the oven when you get home! I served mine with a grilled chicken breast. But you could completely switch things up and use a meat sauce over the ravioli or even eat it with no meat...but that wouldn't happen in my home! Enjoy!

Crockpot Steak Tacos

 
New Crockpot recipe here on the ole blog today and it is one delicious recipe that my whole family LOVED!!! I will say with my new found love/need of using my crockpot more frequently I may need to invest in one of those fancy ones that will cook for a certain amount of time then just hold things to warm. Otherwise I am going to have to start bringing my meals to work to cook and switch off at a certain time. I leave my house pretty dang early in the morning and I don't always, ok I never make it home within 8 hours of leaving. Basically meaning that whatever I'm putting in the crockpot had better be a ok cooking for a LONG time. This recipe I figured out a way to make it work but the timer slow cooker would have been nice. I found that if you put your meat in frozen into the crockpot obviously it will take longer to cook so that is what I did for this one! Hopefully this one will be loved by you and yours and make it into your dinner rotation! 

Crockpot Steak Tacos

1 larger Skirt Steak (which I found at Aldi!!! Score!!!)
1 Package Taco Seasoning (you can make your own) 
1 Can Diced Tomatoes
1 Cup Water

Put steak in the bottom of the slow cooker, sprinkle the taco seasoning over to coat cover with tomatoes and water. Cook on low for 6 hours...if your steak is frozen you can get a few more hours out of it. When you get home remove steak from cooker, ans slice across the grain. Serve with your usual taco fixings! And ENJOY!!!

Crockpot Creamy Sun-dried Tomato Chicken


 This little slice of heaven is where it is at! I cannot tell you how good my house smelled on Tuesday night when we returned home from the Y. Gracious it was intoxicating! I actually just at this again for lunch today and it just gets better. So as I have shared before Charlot is taking gymnastics on Tuesday and Thursday evenings so most of the suppers I prepare for those evenings need to be in the crockpot or need to be able to be thrown in the oven to cook while we are gone. I adapted this recipe from something I found on Pintrest and truly I couldn’t be happier with this new Crockpot recipe for the rotation! It was so flavorful and easy with few ingredients, with the added bonus that everyone in my family loved it.

 I will say that I may need to invest in one of those crockpots that automatically turn to warm after the number of hours you want something to cook. I am noticed a lot of crock-pot recipes only require 4-6 hours of cooking and let’s get real honest here  I am gone from home WAY more than 4-6 hours. For this recipe I just had all the ingredients in the fridge ready to go and when I got home I threw it in the crockpot turned it on high for 2-3 hours. When I got home I removed the chicken stirred in the cream let it cook while I cooked the pasta and when it was done I stirred it all together.

I was quite impressed with the results of this recipe and there were clean plates all around my table so I know the others were happy as well! I hope you and yours will enjoy it as well!

Crockpot Creamy Sun-dried Tomato Chicken

2 Large Boneless Skinless Chicken Breasts
½ Cup Flour
Salt and Pepper to taste
2 Cups Chicken Stock
½ Cup Sun-dried Tomatoes in Olive Oil
1 TBSP Italian Seasoning
½ Cup Heavy Cream
Pasta, Mashed Potatoes, or Rice to Serve
Heat EVOO in a large Non-Stick Skillet, season flour with Salt and pepper, dredge chicken breasts in the flour and brown in the skillet. This should take about 2-3 minutes per side. In your crock pot mix Stock, tomatoes, and Italian seasoning, place browned chicken in the crock. Cook on low for 4 hours or high for 2, once this time has lapsed remove chicken stir in cream and allow mixture to cook for 20-30 minutes. Return chicken to the crockpot before serving. ENJOY!

Shrimp Tacos with Lime and Jalapeno Slaw


So I read that today is National Taco Day!!! Why didn't I know of this glorious holiday before? And why oh why do I have to work on this day! On top of it being National Taco Day...it is TACO TUESDAY!!! I am finally bringing you a new recipe! But if you take a close look at this picture that is grass in the back ground yes green green grass. Not exactly October grass that is more like spring grass May 24th grass to be exact. You have got it right I have had this recipe ready for a post since May. But it just hasn't happened apparently having a baby, going on maternity leave, managing our house, getting my kid ready for school, starting kindergarten, starting daycare, and going back to work prohibited me from actually achieving this being blogged. 

But trust me it is worth the wait! Especially since it is on this all important holiday! These have quickly become a favorite in our family! Charlot especially LOVES them a requests them pretty much weekly. That kid loves shrimp and when you throw it into a taco it can't get much better. I actually made these for my Daddy-o and the Hubs for Father's Day and they both were quite pleased with their delicious dinner. 

Any who here is the recipe make these tonight to celebrate! We won't be having tacos tonight in celebration we had tacos Saturday night, nacho soup Sunday night, and taco bowls Last night. I feel it is time for a change although if I put tacos on the table tonight the other two solid food eaters in my home would rejoice. They are sure to turn into a taco! 

Shrimp Tacos with Lime and Jalapeno Slaw
1 lb Large Raw Shrimp (Peeled and Deveined) 
1 Can Mango Nectar (can be found in the Hispanic Section of your store) 
1 TSP Chipolte Powder
1 TSP Cumin
1 Garlic Clove (Minced)
1 TSP Salt
1 Lime (Juice and Zest)
Charred Tortillas 

1 bag of Slaw Mix
1 Jalapeno diced (seeds and membrane removed)
1/2 Plain Greek Yogurt
1/4 Mayo (use the real stuff)
1 lime (Juice and Zest)
1 TSP Apple Cider Vinegar
Splash of milk to thin
Salt and Pepper to taste 

Mix Shrimp, Nectar, Chipolte Powder, Cumin, Garlic, Salt, and Lime in a large zip top bag and marinate for at least 1/2 an hour and up to a hour. In the meantime mix slaw dressing of yogurt, mayo, lime, vinegar, milk, salt and pepper stick it in the fridge for flavors to combine. Don't Dress the slaw until ready to serve you want the cabbage to still have some crunch. Heat a large skillet with EVOO. Remove shirmp from marinade, sear off the shrimp careful to not over cook. Char some tortillas either over your gas flames or with your broiler. Dress the slaw. Place 4-5 shrimp in a tortilla top with some slaw and serve!

Pulled Pork Pizza


Ok so I know I have not been a good blogger basically in a long time. Please forgive me I seem to say that a lot to you guys but I really mean it. I have stories to tell and recipes to share I just need to be better about actually sitting down and typing them up. Plus with the impending arrival of the second child in our lives I need to be a better blogger. I want this child's early days and days/months/years to follow documented just as I did Charlot's. Anyway thanks for sticking with me coming back and continuing to read. Does any of this have to do with the above picture, NOPE. I needed to get that off my chest before I could present this amazingness. 

Today is Pi day 3.14 day, and many people like to celebrate by eating pie, I plan to make one tonight. But if you want a different type of "Pie" this will be for you, a pizza pie. A Pulled Pork Pizza Pie to be exact! Sounds a bit different yes, is it a bit different yes, does it taste amazing yes, so what do you need to do MAKE IT!

This little jewel was born out of necessity...the hubs decided he needed to try his hand at smoking an entire pork shoulder, delicious yes but also tons of meat. We had eaten it with baked beans and slaw we had prepared it with potatoes, green beans, and cornbread, we had had our fill of pulled pork sandwiches. And when I say we had had our fill I'm really meaning me, I'm pretty sure the hubs could have continued the trend eaten a few hundred more sandwiches. But I was ready for something else, and I was craving pizza. I won and let's face it the hubs won too because he loved this pizza! 

If you happen to be like me and need an idea of what the heck to do with your leftover pulled pork here ya go! The slight creaminess of the sauce plays in really nicely with the spice of the pork. Then the cheese well you just can't have pizza with out ooey gooey cheese. Lastly my favorite part was the pork got kind of crispy on the edges like bacon and its saltiness combined with the brininess of the banana peppers perfection. But when you got the perfect bit it was absolutely incredible. Oh now I wish I had some more pulled pork at home! YUM!

Pulled Pork Pizza

1 Recipe of Pizza Dough (your favorite, frozen, or the kind in the tube will be fine)
1/4 cup Mayo (the real deal NOT Miracle Whip)
3/4 cup BBQ Sauce (I used Gates because I love the spice and the vinegar in it)
2 Cups Pulled pork 
1 8oz block Cheddar Jack Cheese (grated)
Jarred Banana Peppers to Taste

Heat oven to 400. Prepare your pan (I always use rimmed cookies sheets) by spraying it and sprinkling it with a bit of cornmeal, spread your dough out in the pan. In a small bowl combine mayo and BBQ Sauce, spread over your crust. Top with Pulled Pork, then Cheese, and last the Banana Peppers. Bake for 20-25 minutes or until crust is nicely browned and pork is crisping up! Remove from oven and allow to cool for 5 minutes or so before slicing. ENJOY!

Cauliflower Fried Rice


Last week I was honored to be able to speak again to the biggest loser group I am apart of about healthy eating. That night I tried to focus on healthier swap outs. Because in all of my weight loss journey I have not deprived myself of anything I love food and I knew that if I was going to change it wasn't going to be by changing everything about what I ate! 
The night I spoke I had several options for them to try. Spiced Chickpeas as a healthy alternative for afternoon snacking. Avocado Ranch Dip instead of your typical ranch. I gave samples of Turkey Sausage to show how to cut out some calories without losing taste. I also made an alternative to ice cream, with Peanut Butter Chocolate Chip Banana Bites. As I was preparing for this little class I knew I wanted to prepare a main dish that had and easy swap out and lately I have been needing lots of Chinese Food. That is where my love for fried rice met my dislike for cooked cauliflower. Boy oh boy am I glad I gave this a try. Plus one of the pickiest people in the group was amazed by it and thought it was rice!!! Winner! 
This dish could be served alone for a meat free meal or paired with some awesome crock pot pineapple chicken like I did in the picture above. Note if you have been avoiding trying these recipes because you don't own a food processor NO WORRIES!!! I found in my local Wal-Mart near the bagged lettuce Cauliflower Crumbles!!! Yup that's that right just open the bag and they are ready to use!!! 
Give this a try for a great healthy option to your typical fried rice!!! Oh and someone mentioned to me the other day that I hadn't posted a before and now (not after because I will always be a work in progress) picture in a long time! Well below the recipe there is one, I feel pretty dang great about how far I have come! 
   
Cauliflower Fried Rice 

INGREIDENTS
1 head cauliflower, chopped into florets
1 small yellow onion, finely chopped
1 cup frozen peas and carrots 
2 eggs, beaten
1 Tbsp sesame oil
1/4 cup low sodium soy sauce
1 Tbsp light brown sugar
1/8 tsp. ground ginger
Pinch red pepper flakes
2 Tbsp green onions, chopped

INSTRUCTIONS
Chop head of cauliflower into florets and place in food processor. Pulse until it starts to resemble rice; set aside.
Heat a large wok (or skillet) over medium heat and drizzle in sesame oil. Add onion, peas and carrots and saute until tender, about 2 minutes.
Meanwhile in a small bowl, whisk together soy sauce, brown sugar, ginger and red pepper flakes; set aside.
Slide veggie mixture to one side of the wok and add in the beaten eggs, scrambling until cooked through and then incorporate with the veggies.
Stir in cauliflower "rice" and pour the soy sauce over top, mixing well. Cook for an additional 3 to 4 minutes, until cauliflower is soft and tender.
Top with green onions, serve and enjoy!

Broccoli Pesto...Two Ways!


Is there anyone else who loves and I mean loves…pesto! Not necessarily the jarred stuff… not that it isn’t good just not quite like the fresh stuff that my summer bounty of basil allows me to produce, so anyone else on team pesto?
That was ridiculous how long that took me to explain I really like pesto! But here’s the kicker, the hubs, grrr doesn’t like basil!!! WHAT how can one simply not like basil it is the key ingredient in basil pesto…sad days for me. What is the point in making a meal featuring pesto if I am going to have to make something else for him? Well I think the food good vibes were shining on me this weekend and were aware that I needed pesto in my life. As I was cleaning Saturday I had the food network on, Giada in Italy to be exact and I heard her speak of a broccoli pesto that she was putting on a grilled chicken sandwich. Say WHAT!!! Not that I actually took the time to stop and listen to what she was saying or actually go look the recipe up but I knew this was the answer to my pesto prayers.

On Sunday I decided this so called broccoli pesto needed to be created! I had broccoli, almonds, parmesan cheese, and EVOO what else could I possibly need? Off I went to create. Steam up the broccoli, drain throw in food processor (if you don’t have one you need one!), add remaining ingredients season with salt and pepper. There you have it! Perfect Pesto, hum nope it needed something, something like basil (no no no!) green onion tops! YES!!! Oh and a little lemon zest and juice!

Here it was used as our pasta sauce!
This was the perfect spread for a grilled chicken sandwich then it made quite a bit so I stirred it into some pasta last night thinned with some pasta water delicious! Give this healthy oh so yummy spread a try! I’m thinking it will make the perfect sauce for pizza!

Broccoli Pesto
4 cups fresh broccoli steamed
1 cup Sliced Almonds (toasted)
1 cup Parmesan Cheese
1 cup EVOO
¼ cup Green Onion Tops
Juice and Zest of one lemon
Salt and pepper to taste
Place all ingredients in food processor minus the EVOO, pulse to combine, stream in EVOO and blend until smooth you want a good spreadable consistency.  ENJOY!

Quick and Easy Saucey Chicken Tostada's...


As I have mentioned a time or twelve before summers are pretty crazy busy around our house. So that makes mealtime a bit of a struggle at times. But this is one meal that I turn to when I need supper on the table quick and I need to not be slaving over the stove. I can get home start the chicken go clean up from work and still have supper on the table in approximately 30 minutes!  I love the meat in this recipe I use it for tacos, nachos, chicken walking tacos, enchiladas, anytime I want a little heat in chicken this is pretty much my go to! Oh and the sauce is the best let’s be honest I could just drink it, so smooth and rich and wonderfully simple.

I have included my recipe for taco seasoning, I have been making this for several years and have found that I really prefer it to the packages, but feel free to use your favorite taco seasoning it will not hurt my feelings! Please make this for your family soon you will not regret it! Oh and if you have any extra I would gladly take a serving off your hands!

Quick and Easy Saucey Chicken Tostada's 
4 boneless skinless chicken breasts
1 can fire roasted diced tomatoes
2 TBSP Taco Seasoning Mix
1 ½  cups Chicken broth
8 corn tortillas
Cheddar Cheese
Lettuce
Sour Cream
Place chicken breast in a large skillet with a lid, mix together tomatoes and taco seasoning pour over chicken. Add enough broth to almost cover the chicken. Turn heat on to medium and cover the skillet. Allow chicken to simmer for 20 minutes or until easy shredded, try not to overcook. Once chicken is shredded leave the lid off the pan and turn the heat up for five additional minutes to help thicken the sauce. In the meantime if you have a gas stove take some tongs (metal) and brown your tortillas over the flame turning frequently. If you do not have a gas stove you can crisp them up in the oven by heating it to 450 and placing tortillas directly on the rack. Once tortillas are browned it is time to assemble! Place a tortilla on the plate top with some chicken and plenty of sauce, add some shredded cheese to the top, layer another tortilla and repeat with chicken and cheese, finish off with lettuce and sour cream. ENJOY!!!
Taco Seasoning
2 TBSP Chili Powder
1 TBSP Cumin
2 TSP Corn Starch
2 TSP Kosher Salt
1 ½ TSP Paprika
½ TSP Red Pepper
Combine all ingredients in a mason jar, store in refrigerator for longer freshness.

Pepperoni Pizza Rolls


Today on this here ole blog we have an incredibly easy and ridiculously delicious meal that the whole family will love. I love meals that are easy to make and fun to eat and this one does just that. Charlot and I made this on Saturday night for movie night. It was simple and she was able to help with every step. We probably didn’t end up with as much pepperoni in the actual roll due to her eating it as she went but she had a ball. The best thing about this recipe for us is Charlot isn’t a huge fan of sauce so we put very little in the roll and served it on the side so she could dip into the sauce and she loved that!

This would be the perfect meal for those busy nights that supper needs to get on the table fast and you want no complaints. Plus the added bonus is you could switch this up to accommodate your family’s tastes, add veggies, or ham, chicken, or whatever your crew’s favorite pizza toppings are. This just makes it a fun and different way to enjoy your pizza.

Pepperoni Pizza Rolls
1 Can Pizza Crust Dough
1 Small Jar Pizza Sauce
2 Cups Mozzarella Cheese
1 Package Pepperoni (I used Turkey Pepperoni)
2 TBSP Corn Meal
Preheat oven to 375 degrees (or whatever your pizza dough calls for). Spray a large rimmed baking sheet sprinkle on corn meal. Spread pizza dough over the corn meal try to get it pretty thin without any holes. Spread a thin layer of sauce over the dough, do not use too much here your roll won’t turn out right if you do. Top sauce with 1 cup of the cheese, then pepperoni followed by the remaining cheese. Then roll the dough up like you are rolling up a cinnamon roll. Then brush the top with some EVOO and sprinkle with parmesan cheese if desired.  Bake for 15-20 minutes or until golden brown and cooked through. While roll is baking warm remaining sauce for dipping. Once roll is out of the oven allow it to cool for 5-10 minutes before slicing. After that slice and serve with sauce! ENJOY!

Pretzel Chicken Strips


This is one of my new favorite meals because you can serve the protein to suite many pallets. I made these last night for supper, the hubs and I ate ours on a salad while Charlot enjoyed hers with ketchup and carrot sticks.
Give these a try the crispy crunchy crust on the outside is perfectly salty and keeps the chicken extra moist and juicy! I love the idea of serving these with honey mustard to give some sweet to go with the salty! YUMMY!

Pretzel Chicken Strips
4 boneless skinless chicken breasts (cut into strips)
½ cup Flour
2 Eggs
2 TBSP Water
2 Cups Pretzel Sticks (Crushed)
Salt and Pepper to taste
Pre-heat oven to 400 degrees. Line a sheet tray with aluminum foil and spray with cooking spray. Take three cake pans or something kind of pan with sides, in the first put flour seasoned with salt and pepper, next add eggs and mix with water and season with salt and pepper, in the last pan put your pretzels. Now season chicken pieces with salt and pepper, then dredge with flour, move to egg, then coat in pretzels, finally place on sheet tray. Once all strips are done, bake in oven for 12 minutes, turn the strips and return to the oven for 12 more minutes. Serve as you wish I served mine over a salad with honey mustard vinaigrette.

Chicken enchilada casserole...


I am a strong lover of Mexican Food. It is my weakness, ok so most of my weakness revolve around food but I am not ashamed. Mexican food though it holds a very special place in my heart! The hubs knows that when I have had a bad day, he can skip the flowers, and utter these words “do you want to go eat Mexican.” Chips, Salsa, Margarita I am there! This casserole provides me with my Mexican fix in an easy mid-week package.
Since it can all be made and assembled ahead of time it is perfect for freezer meals. Or if you are like me and normally have shredded chicken on hand it makes quick work when getting home from work. I loved the heartiness of the casserole and who doesn't love cheese!

Chicken Enchilada Casserole

3 large chicken breasts
1 package chicken taco seasoning
2 cups broth or water
2 cups dry rice (you can use pretty much any kind)
2 (10 oz) cans Enchilada Sauce
1 can refried beans (I used the vegetarian kind, a little more thigh friendly)
2 cups shredded cheddar cheese
1 tsp hot sauce

In your slow cooker place chicken taco seasoning and broth, allow to cook for 6-8 hours on low. Shred. Cook rice according to package directions. In a large mixing bowl combine chicken, rice, sauce, beans, 1 cup of cheese, and hot sauce, season with salt and pepper to taste. If the mixture seems too thick for you add a little of the chicken cooking liquid. Pour mixture into a prepared casserole dish. Top with remaining cheese. Bake at 350 for 35 minutes. Serve with lettuce, tomatoes, sour cream, black olives, or whatever you wish! Just ENJOY!

Pepperoni Pizza Lasagna Rolls...

This recipe was in the running during the contest last week, though to got no votes, you must have been blinded by cheesecake, I thought it was most definitely worth sharing! Now for me this recipe came from two places one I am a huge fan of lasagna, but I tend to never get the layers just the way I want them so that the cheese has good even distribution. I know I give food a ton of thought, but when you roll up the noodle you are guaranteeing yourself cheesy goodness in each bite. Second my kid LOVES pepperoni pizza, and the night I made this she told me she LOVES Telpha’s (her babysitter’s) Lasagna. Well I can’t be beat out by the sitter (hahaha) so I thought why not put both her loves into one.

Those were two reasons for the birth of this recipe but here are a few other great things about it! Since you have pepperoni in the noodles you don’t have to use quite as much meat in the sauce (money saver!) This uses jarred pasta sauce so it is completely doable on a week night. This freezes beautifully, I am thinking the next new baby family is getting this! Lastly in my home it was both kid and hubby friendly! The hubs said it was a good thing that I had packed part of it up and froze it because he might have eaten the whole pan.  Charlot liked it but proceed to tell me that Telpha’s was better! Oh well maybe next time. Hopefully and your family can enjoy this as well!
Let’s Make This!

Brown some burger, you could use, beef, pork, or turkey! I like to season mine with salt, pepper, and a bit of red pepper. But you season as you see fit!

Pour on some sauce. I love making my own sauce, but a good jarred sauce is perfect for this. Add a little garlic powder and allow this to simmer away!

Now I completely forgot to take a picture of the ricotta mixture before I spread it on the noodle, but here it is. You want to allow your noodles to cool for a few minutes before you attempt this step. Don't ask just trust...

Lay on some pepperoni. Now I started out using 5 pieces per noodles but I had a pepperoni thief in my kitchen. She's short and blond with blue eyes I can't seem to say no to! I suggest using the Turkey Pepperoni, one it is better on the thighs, but to me it also isn't a greasy tasting as some pepperoni can be!

Pepperoni Pizza Lasagna Rolls

½ lb. Lean Hamburger
1 Jar of Pasta Sauce
14 Lasagna noodles
1 container Ricotta Cheese
½ cup Parmesan Cheese
1 Egg
½ tsp Garlic Powder
1 package Turkey Pepperoni
2 cups Mozzarella Cheese (shredded)


Pre-Heat oven to 350 degrees. Brown hamburger in a skillet, add jar of sauce and allow to simmer. Cook noodles according to package directions in salted water and drain allow to cool before trying to handle. In a medium bowl mix, ricotta, parmesan, egg and garlic powder, season with salt and pepper if desired. Ladle a cup or so of the sauce into the bottom of a 9x13 greased baking dish. Now take out a noodle and lay it on a flat surface spread a good dollop of the ricotta mixture over the noodle. Top with 4-5 slices of pepperoni, roll it up and place in your pan. Repeat with all noodles until pan is full. Pour remaining sauce over noodle rolls and top with mozzarella cheese. Bake covered for 20 minutes and uncovered for 5-10 minutes to brown the top. Let the lasagna sit for 10 minutes or so before you try cutting into it. ENJOY!

Grilled Chicken and Pineapple Quesadillas



Do you ever just need a simple quick meal that is satisfying and a bit out of your typical routine? Well I seem to gravitate towards these types of meals all the time. I want quick and easy but I don’t want to be eating the exact same meal each and every week, my meal planning has helped with this. But recipes like this one have also helped. I mean 5 ingredients plus some seasonings, 30 minutes and supper is on the table I think that is a win win win!
These quesadillas are the perfect mix of spicy, smokey, and sweet plus the crunch from the pan seared tortilla I can hardly resist!


Grilled Chicken and Pineapple Quesadillas
1 large Boneless Skinless Chicken Breast (seasoned how you wish, I did salt, pepper, garlic, and paprika)
1 Pineapple (fresh or canned) cut into rings
2 cups Pepper Jack Cheese (shredded)
Baby Spinach (if you like)
8 Flour Tortillas
Heat your grill pan or outdoor grill and cook chicken until done. Place pineapple on the grill as well just to get some good char marks. Once these are both done slice chicken breast into thin pieces and cut pineapple in half. Heat a non-stick skillet with a bit of cooking spray. Assemble tortilla then cheese, then chicken and pineapple, plus spinach and more cheese top with second tortilla. Sear in pan on both sides until golden.

One Pot Wednesday...Quinoa Taco Bowls


Not exactly one pot more like one pan but still one piece to clean up! Can I get an AMEN! We love and I mean LOVE Mexican style food in our house. Tacos especially! In an effort to expand our food horizons and continue on my journey towards a healthier me I decided that we needed to check out this whole Quinoa thing! I know it has been around and popular forever but as usual I am last to jump on the cool train! So my thought was why not make one of our favorite foods into a healthy hearty simple supper?

This is the kind I bought just for reference

Quinoa Taco Bowls
(serves 6)

1 lb Hamburger
1/2 Onion (diced)
1/2 Bell Pepper (dices)
1 TBSP Cumin
1 TBSP Chile Powder
1/4 TSP Red Pepper
Salt and Pepper to taste
1 can Black Beans (rinsed and drained)
1 can Diced Tomatoes ( I used fire roasted)
1 Pkg Roasted Garlic Quinoa 
1 1/2 Cup Chicken Stock
Taco Toppings-
Lettuce
Tomato
Cheese
Avocado
Sour Cream 

Brown Hamburger with onion and bell pepper, cook until no longer brown, and drain. Return hamburger to the same skillet turn heat to medium add seasonings, stir to coat the meat. Add in beans, tomatoes, quinoa, and stock bring to a boil and reduce heat. Cover and simmer for 15 to 20 minutes. Serve with taco toppings, serve how you would like just serve and enjoy!

Fakeout Takeout...Broccoli Beef and Crab Ragoon

In an effort to keep to my resolution, that I talked to you about last week, about not going out to eat as much including takeout I came up with this yesterday. Making your own fakeout takeout, plus it is done in the crockpot! YUM! Now this is not one of those recipes that you can throw in the crock at 6a.m. and come home to at 6p.m. and expect it to be perfect. But it is ideal for those weekend meals where you know you have a crud ton to do and getting dinner on the table probably isn’t going to happen. Throw this together after lunch and it will be perfect for supper or think Sunday morning before church for lunch!



I was kind of skeptical of this when I started basically because most of my attempts to make Chinese food at home never satisfy my need for CHINA INN (our local place). But I will say this did, so flavorful and not too salty but rich and hearty. Plus it is pretty darn healthy because you are controlling the ingredients. Plus the crab ragoons, though not as creamy as the restaurant ones, only have 1 WW point per ragoon! Please enjoy these recipes and let me know what you think I would love to hear from you!

Crockpot Beef and Broccoli
1lb Beef Arm Roast cut into thin strips
1 cup Beef Stock
½ cup Soy Sauce
3 cloves Garlic minced
1 TBSP Sesame Oil
1/3 cup Brown Sugar
2 TBSP Cornstarch
4 TBSP Cooking Liquid
1 package frozen Broccoli Florets
White Rice (I cooked mine in beef broth and a splash of Teriyaki sauce)
Cashews sprinkled on top for some added crunch

Combine in your crockpot insert stock, soy sauce, garlic, sesame oil, and brown sugar. Once mixture is well combined and sugar has dissolved add in your strips of meat and stir to coat. Cook on low heat for 4 -5 hours (don’t go much longer or you will have shredded beef.) Take 4 TBSP of your cooking liquid and combine with cornstarch pour back into the crockpot and add the broccoli, allow mixture to cook for 30 minutes longer. Serve over white rice and crab ragoon on the side. YUMMY!

Baked Crab Ragoon
15 wonton wrappers
3 oz Cream Cheese at room temp
4 oz Imitation Crab meat diced
1 green onion sliced thin
¼ tsp Worcestershire Sauce
¼ tsp Garlic Salt

Preheat oven to 425. Combine cream cheese, crab, green onion, Worcestershire, and garlic in a small bowl. Have a baking sheet that has been sprayed with pam ready. Take one wonton and place 1 tsp of the cream cheese mixture in the center, then using water dampen the edges of the wonton, bring up the sides to near fold the wonton in half, then bring up the other two sides and press together. Once all wontons are filled place on baking sheet and spray all the filled wontons with cooking spray. Bake for 8-10 minutes.

Harvest Salad



Holy Halloween! The candy bug bit me big time I could not seem to stop eating it on Friday. So in an effort to hit the reset button on Saturday I really had a hankering for a nice salad. But it was extremely cold Saturday so I knew a nice hearty salad is all that would do. I couldn’t get the idea of fall flavors in a salad out of my head that is where this beauty was born. 

Ingredients could easily be switched out to change up the flavor a bit, pecans for almonds, parmesan for blue cheese, oh and turkey for chicken (I’m thinking thanksgiving leftovers). But I would highly recommend leaving the apples in there, their sweetness combined with the sharpness from the vinaigrette is awesome. Give this a try. Oh you could easily leave out the meat and eat it as a starter to a meal! Hope you all enjoy!

Harvest Salad

Makes 4
3 boneless skinless chicken breasts
Salt and Pepper to taste
3 pieces of bacon (cooked and diced)
1 bag fresh spinach 
1 bag of an artisan blend of lettuce (I prefer the artisan blend that has four small heads of lettuce that you have to chop)
2 Gala apples (sliced)
1 small package Dried Cranberries
1 small package sliced Almonds (toasted)
2-3 oz blue cheese

Preheat a non-stick skillet over medium heat with a bit of EVOO and butter, season chicken with salt and pepper. Add whole chicken breasts and sear until cooked through usually 3-5 minutes/side. Allow to rest for 5 minutes prior to slicing thin. I like to plate these salads individually but the same thing can be done in a large bowl. Start with spinach and lettuce blend, top with almonds, cranberries, and cheese. Lastly add warm chicken and apples. 

Plum vinaigrette 
 ¼ cup plum preserves
½ cup EVOO
1 TBSP Dijon Mustard
1 tsp apple cider vinegar 
Salt and pepper to taste
Wisk all ingredients together until well combined. Drizzle over salad and toss.

10 ideas for adding more veggies to your diet:


Last night I had the awesome privilege of speaking to and cooking for the biggest loser group that I am a part of. The idea for the evening came about when one of our members expressed her frustration about her dislike of fruits and vegetables she wanted a healthy food redo. I am so glad that she spoke up and the idea for the night was born. I have found that I love to give people (especially moms) tips and tricks to healthy up their diets. So here are my ten ideas plus the recipes for the things I made last night. My hope is that last night really helped that member and maybe gave a few more some ideas! I know it made her son happy because when he asked if he could take home a plate of the spaghetti squash and veggie pasta sauce!
10 ideas for adding more veggies to your diet:
1.  Have vegetables with every meal
Breakfast:
Stir in some fresh tomatoes and mushrooms  to your scrambled eggs
Make egg muffins loaded with your choice of veggies:  
                Spinach
                Tomato
                Kale
                Aspargus
Spread Avocado onto toast
Breakfast burritos loaded with peppers, onions and mushrooms
Zucchini bread made with unsweeted apple sauce
Snacks:
Celery and Carrot Sticks with Peanut Butter (All Natural is best)
Sugar Snap Peas with Greek Yogurt Ranch Dip
Ham and Cheese roll up stuffed with Cucumber or radishes
Kale Chips 
Lunch:
Instead of using Iceberg lettuce in your salad or wrap start using other lettuces or even spinach. Others can include- Green leaf, Red Leaf, Romaine, Arugula, Butter Lettuce
Always have carrot and celery sticks available
When out opt for a side salad instead of fries (watch the dressing though)
Load sandwiches up with veggies, lettuce, and tomato are great , but try adding cucumber, carrot, and radish as well.
Supper:
Shred zucchini into pasta sauces
Roast veggies and puree with broth and a splash of cream for a delicious soup.
Use grilled portabella mushrooms as a “bun” for a sandwich
When making mashed potatoes use half potatoes and half turnip or cauliflower
Shred carrot into meatloaf, meatballs or hamburger patties
Top pizzas with extra vegetables

2.  Drink your veggies
Smoothies are a great way to get vegetables as well as fruit into your diet. Mix any combination of fruit and spinach or kale in a blender with plain Greek yogurt and a splash of milk.

3.  Make a goal to try one new vegetable per month
Have you always wanted to give spaghetti squash a try or maybe Brussel sprouts? Just buy one and give it a chance. If it isn’t a hit that’s ok try something else next month. Mine for this month is bok choy!

4.  Keep vegetables front and center in your fridge
If the first thing you see when you open your fridge is healthier options you are more apt to use them.

5.  Double the amount of vegetables in recipes
A soup you are making calls for 1 cup of carrots double it. A casserole calls for 1 can of green beans try two. You see the trend…

6.  Try a meat-free night per week
A vegetable stir –fry or vegetable soup are great options. If your house is like mine and meat free doesn’t work. I do a  light meat night, using ½ the amount of meat in recipes replacing it with vegetables.

7.  If you don’t like the canned version of a vegetable try the fresh or frozen
I cannot stand canned asparagus, but will eat fresh by the pound. Broccoli is another that I prefer fresh to frozen.

8.  Try vegetables in a new way
Roast broccoli, try cauliflower in soup, grill mushrooms, stuff spinach inside chicken breasts, the possibilities are endless.

9.  Have a vegetable/food prep hour per week
Set aside 1 hour per week for prep. I usually do this on Sunday evenings. Cut up carrot and celery sticks, dice vegetables (peppers, zucchini, onions, mushrooms) roast on a sheet tray this can be a quick side for all week, wash lettuces and chop for quick salads, prepare your egg muffins. When doing these things make sure you are making enough for the entire week. It will set you out for a better week.
10.       Cut pasta amount in half and replace with vegetables cut into long strips
Zucchini, carrots, and yellow squash all can be cut into thin ribbons. You will still have the pasta but you will be consuming vegetables with each bite.

Here are some of the recipes I made for the group last night hope you will give them a try!

Spaghetti Squash
1 spaghetti squash
3 tbsp EVOO
1 clove garlic
Dash red pepper flakes
Salt and peper to taste
Pre-heat oven to 400. Line a rimmed baking sheet with foil. Cut the squash in half lengthwise, scrape out all the seeds and center membrane. Drizzle with ½ tbsp EVOO and season with salt and pepper. Place each half cut side down on baking sheet and roast for 35-45 minutes. Allow squash to cool a bit, and scrape out the “noodles” into a bowl with a fork.  (This can be done during your weekly meal prep time)
In a large non-stick skillet heat 2 TBSP of EVOO add garlic and red pepper. Sauté squash for a few minutes to coat in the mixture.  Top with your favorite sauce.

Veggie packed marinara sauce
1 large can crushed tomatoes
1 small zucchini shredded
1 carrot shredded
6-8 mushrooms shredded
3 TBSP EVOO
3 cloves garlic
Dash red pepper flakes
1 tbsp sugar
1 tbsp Italian seasoning
Salt and pepper to taste
 In a large pot heat oil pepper flakes and garlic over medium heat until garlic is browned. Remove garlic. Add remaining ingredients to the pot and all to simmer for 30 minutes. Season to your tastes and puree for a smooth texture.

Egg Muffins (12 muffins)
9 eggs
Splash of milk
Several dashes of tabasco
Salt and pepper to taste
Vegetables of your choice
Cheese of your choice
Pre-heat oven to 350. Spray a muffin tin with Pam. In the bottom of the tin place vegetables of your choice. In a large bowl whip eggs together with milk, hot sauce, salt and pepper. Pour over vegetables; only fill tins between ½ and ¾ of the way top with cheese of choice. Bake for 40 minutes. I find it is easier to get these out of the pan if they cool completely first.

Carrot and Kale Chips
3 carrots
1 bunch of kale
EVOO
Salt and Pepper
Heat oven to 400. Slice carrots thin, the thicker you slice the chewier the chips are. Tear kale in to small pieces. On a lined cookie sheet spread out the carrots and kale you may need more than one sheet. They need space to crisp up. Drizzle with EVOO and season. Bake for 10 minutes stir and return oven to crisp.

Green Smoothie
1 cup of Strawberries
1 cup of Blueberries
1 Handful Spinach
½ cup plain Greek Yogurt
Splash of milk
Ice

Add fruit and veggie in the blender with yogurt and milk. Fill the remainder of the blender with ice. Blitz until smooth. 

Potato Turnip Mash
1 Large Yukon gold potato peeled
1 large turnip peeled
2 TBSP butter
2 TBSP Plain Greek Yogurt
Salt and pepper to taste
You can increase this recipe by adding more of each just remember a 1 to 1 ratio. Cut potato into larger chunks than the turnip into. Put your turnip and potato into a pot and cover with water. Boil until tender then drain. Add butter and yogurt. Season and mash. I use a hand mixer because I like a smoother consistency. If your mixture is too thick you can add more yogurt, if the mix gets too thin stick it in a hot oven for several minutes to draw out some of the moisture.  Serve warm

Ranch Veggie Dip
1 large container of Plain Lowfat Greek Yogurt
1 packet Ranch Dressing Mix
1 Packet Green Onion Ranch Dressing Mix
Mix all ingredients together and chill. Serve with veggies or thin with milk and use as a salad dressing.
