Where have I been and why haven't I been cooking much...

I feel I have not been a great blogger this past week. Ok so I am not sure I am ever a great blogger but I feel I have neglected it. I also feel that my few faithful readers deserve some explanation. During the time from late June through mid-to late July I work each and every day. Yes seven count them seven days per week in a corn field. Nope it isn’t a ton of fun but it is a part of the job and I know that each year it will be the same. This is our peak pollinating time and we have roughly 150 high school kiddos at our research center each day that need my attention (plus the attention of everyone who works here).




I will say the kids help make it a lot more fun and when we get views of the crop dusters like these that is pretty awesome as well. I do promise to be better and I am actually cooking a recipe tonight so there will be a homemade meal on the table tonight, family get excited!!!

4th of July Recap...


I know the 4th of july is over but I couldn’t resist posting some pics from our families celebration. Every year my parents have a big party for all our family and friends and this year was no different. Even though not as many people as usual could make it, fun was had by all. The evening included plenty of delicious food, water gun fights, and FIREWORKS. I being well me didn’t take a picture one, yes I am an airhead. Thankfully Lauren (my SIL to be) came through! She captured some of the best images of Charlot and her cousin Mia. I just look at these pictures and can’t help but smile and think what sweet little ladies they are becoming!

Dinner for one...Pasta with Spinach and Tomatoes

Do you ever have times when you have a crazy night that you need to get many things done and everyone in your home seems to be eating at different times? No, oh so it really is only us. Well occasionally I find our house in those moments. For instance the gate opening night, Charlot and I took the hubs supper, got home I quickly fed her supper and got some laundry done before my parents were supposed to be at our house for our nightly walk. Then when we got home from the walk it was bath time, story time, pray time and bed time for Charlot. And about 8:45 I still hadn’t eaten. I understand it isn’t great on your body to eat so late but I was STARVING! So this little throw together is one I go to in a pinch regularly! Sometimes I add leftover grilled chicken to it, but on this night I ate it straight up like this just noodles, veggies and sauce! If you ever find yourself starving late at night, and need a meal in under 10 minutes flat here is your go to!


Pasta with Spinach and Tomatoes

1 handful of Angel hair pasta (depends on how much you want)

A couple handfuls of baby spinach leaves

1 tbsp Butter

1tbsp EVOO

1/8 cup Milk (I use whole)

¼ cup Parmesan Cheese

1 Roma Tomato (seeded and diced)

½ Lemon (zest and juice)

Salt and pepper to taste

Cook pasta according to package directions, druing the last minute or two of cooking throw in your spinach. Drain and set aside. In the same pot you cooked your pasta in melt butter and EVOO. Turn heat down a bit stir in your milk. Season with salt and pepper. Grate in the parmesan cheese and stir quickly add pasta and spinach back to the pot. Stir to combine everything add in tomatoes and lemon juice and zest stir to incorporate. Top with a bit more cheese. ENJOY!

In Search of...


Hi this is me the wife of the hubs desperately searching to hire a gate opener. Yes I know it sounds crazy and I am not really a lazy person but I seem to get swindled into opening gates quite often here lately.


On Monday the hubs informed me that he was going to go mow some hay. I being the amazing wife I am (BAHAHAHA) offered to bring him out some supper. Normally when I do this it is kind of just a courtesy because he usually says no I don’t really want to have to stop I just eat later. Well apparently on Monday he was on top of his game. He said sure I would love for you to get me some supper I be mowing over at the cattle place.

Sure I know right where that is at! Another HA! I get home grab Charlot, pack him some supper and off we head to where I think he might me. Ok actually I was hoping he would be there because if he wasn’t where I thought that meant he was in the pasture that the actual cattle were in, hence him calling it the cattle place. Well as it turns out hope was not in my favor that evening and he was in fact in the pasture the cattle are currently in. Great a gate to open and cows to deal with.

So I open the gate to get to him. Gate open and closed #1. He jumps in with us and says thanks for supper now can you drive over to the other half of this place (the spot I originally thought he was), I want to check something. Sure we pull up to the gate and he continues to eat his sandwich. Gate open and closed #2. As we drive over to the other half he says how much time do you have? In my head I say none and run away, but as a supportive wife I say a little why? Well I am thinking about moving over here I am pretty much finished up there. OK. He gets out looks at the pasture (ok he did open a few gates then) and gets back in. He says alright I am ready to head back to the tractor. Back up the road we go. Pull to the gate he is eating his peach. Gate open and closed #3. He then says Charlot you want to ride with me in the tractor. Well of course she does. I drop them off at the tractor and head back to you guessed it the gate, to get it open so he, Charlot, the tractor and mower could come through. Gate open and closed #4. So now you should see why I need this gate opener. If you are interested please contact me as soon as possible!!!

Super food breakfast “Muffins”


Ok so I don’t really know if these qualify as a super food but everyone and their mother, brother and dog is using that term so I thought I should try it out! HA! But seriously these are like a super food for me they start my day off perfectly, with good protein and veggies! Plus these puppies are so versatile; you can switch it up each time you make them by changing the meat, cheese and veggies! The portability of this breakfast makes it perfect for the on the go family as well, just pop a couple in the microwave for 30 seconds and you are out the door with your super filling breakfast.


I make a batch of these each Sunday evening and they are perfect for a week’s worth of breakfasts! Once they are baked I store them in zip top bags and refrigerate for the week. You could also make a giant batch of these because they freeze beautifully!
This is how I store mine for the week!

Breakfast “Muffins” (makes 12)

12 Eggs

¼ Cup Milk

Dash of hot sauce

Salt and pepper to taste

12 pieces of sliced ham (the kind I buy fits perfectly in a muffin tin, if yours is bigger just cut it in half)

1 cup spinach (Chopped)

Shredded Cheddar Cheese (use as much or as little as you like)

Preheat oven to 350. Spray your muffin pan place a piece of ham in each cup. In each ham cup add some spinach. Wisk together your eggs, milk, hot sauce, and salt and pepper. I use a large glass measuring cup to do this so I have a spout to pour the egg into the ham cups. Pour the egg mixture into the ham cups fill it about ¾ the way full. Sprinkle the top with cheese. Bake for 35-40 minutes until set. Allow these to cool for a few minutes before removing from muffin tins!
